Sunflowers&Peace2UMore, Please!Hearing chefs talk about their lives and work has been eye opening and completely mesmerizing to me. I’ll never think about eating out the same way again. The sacrifices that chefs make for their livelihood boggles my mind. Preparing food at home is a labor of love but after listening to Eli and his guests, cooking has become a passion. I turn on the podcast and get my chefs knife and chop vegetables and listen to Eli’s calm voice and excellent questions. The trouble is I’ve zipped through the episodes and am nearly at the end. Please continue making episodes or I’ll have to go to reruns!

the tonesterReal chef’s podcastAbsolutely love this podcast. The conversations are always knowledgeable yet engaging. I’m an exec chef in Santa Fe, NM and love listening to other industry vets talk shop and get into the nitty gritty, good/ and bad, of what we do. You probably won’t have heard of many of the chefs unless you’re from Philly but it hasn’t mattered for me yet. The guests have all been great. It feels like you’re sitting with your industry friends having a beer and comparing notes on how you do things and of the ups and downs for the week. Thanks for putting this out Chef. Keep up the great work.

It goes beyond the restaurant day to day but where the food comes from, it’s inspiration and the challenges that each individual has overcome.

XYZ restaurant workerGreat podcast but.....How about a show about the regular person who works in the restaurants ? They are the cog in the machine that keeps the people who are you typically interviewing going and they get no shine. Interview a dishwasher, or someone behind the scenes, they have a lot to say too. Podcasts are a chance to tell a story, and everyone has one. Give the little guys a voice, they are the ones who deserve the most credit, Because we wouldn’t have the luxury of restaurants without the people who clean the floors, bus the tables, prep your food, cook your food, stir your martini. It’s time to give real context as to how this industry functions to outsiders. You don’t need to glorify them, it’s doesn’t have to be 1 person for 1 episode, it could be a category. This week I’m interviewing several “xyz “ restaurant workers and they are gonna tell their story about how/why they do this for a living. People need to not only connect to their food but to the average laborer who does it for you. Great podcast otherwise.

The quality of the guest speakers; and for the early ones their subsequent addendums not only shows the vitality of the restaurant community but also exemplifies the host's own genius. I worked as a line cook for one of Chef Eli's restaurants and the experience was transformative. His ability to lead and teach and coach both his cooks and in many ways his guests into an enlighting service (conversation) is top of the line. It's an honor and a pleasure to listen to these podcasts amidst the coronavirus when I've been cooking over 100 hours a week. Thank you Chefs, Chef owners, dishwashers, service staff and cooks for your continued essential service. This podcast clearly demonstrates how eating and eateries affect our communities; it's worth the listen wheteher as a member of a brigade or as a guest who has dined outside of their homest in their life. Thank you Chef Eli.
